  • How to make Bonito or Tuna flakes?

    From Bonito flakes to tuna flakes, see how our process is done step by step from sea to bowl. With no added preservatives or additives, NAMA toppers are the best for the fussiest cats! ⁠

    Auction / Buying Process

     

    The Port of Yaizu is well known for their main export of frozen bonito in Japan. We buy the bonitos during auction, based on their freshness and fat content.

    Cooking / Boiling Process

     

    We cook the bonito while maintaining an optimum temperature. The boiling time and temperature varies according to the size of the bonito and the season it was caught in.

    Placement Process

     

    The process of laying them in a basket steamer determines the shape of the bonito flakes. The process of drying the raw materials in a steam room while smoking them is called roasting.

    Roasting Process

    This process, called roasting, is the most time-consuming process in the production of dried bonito flakes. The roasting process consists of resting at normal temperature and repeatedly applying heat.  The number of roasting cycles depends on the size and fat content of the bonito.It takes a month to turn an average 2.5 kg of frozen bonito into a product in our factory. In our plant, the water content is reduced to around 20% and the dried bonito product is completed.

    Cutting Process

     

    We use an electric plane to shave the bonito flakes. Various thicknesses are made by adjusting the planer blade. Our thick cuts have a chewy and slightly hard texture to it and can be fed directly to dogs and cats as treats. Our thin cuts can be added to your pets everyday meals as flavorful toppers. Lastly, our medium cuts can be used as toppers and treats for your everyday activities.
